Ingredients
  

For the Chicken
  • 4 pieces chicken thighs bone-in, skin-on
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
For the Sauce
  • 1 cup cherry preserves
  • 1/4 cup soy sauce low sodium
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
For Garnish
  • 2 tablespoons green onions sliced

Method
 

Prepare the Chicken
  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken thighs with salt and black pepper on both sides.
Sear the Chicken
  1. In a large oven-safe skillet, heat olive oil over medium-high heat.
  2. Add the chicken thighs, skin-side down, and sear for about 5-7 minutes until golden brown.
  3. Flip the chicken and sear for an additional 5 minutes.
Make the Sauce
  1. In a bowl, combine the cherry preserves, soy sauce, apple cider vinegar, minced garlic, and grated ginger.
  2. Mix well until the ingredients are fully combined.
Bake the Chicken
  1. Pour the cherry sauce over the seared chicken thighs in the skillet.
  2. Transfer the skillet to the preheated oven and bake for 20 minutes, or until the chicken is cooked through (internal temperature of 165°F/75°C).
Finish and Serve
  1. Remove the skillet from the oven and let the chicken rest for 5 minutes.
  2. Garnish with sliced green onions before serving.
