Ingredients
  

For the Base
  • 12 ounces shrimp peeled and deveined
  • 8 ounces egg noodles or any preferred noodles
  • 1 tablespoon vegetable oil for cooking
  • 2 cloves garlic minced
  • 1 inch ginger grated
For the Sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon Szechuan peppercorns crushed
  • 1 tablespoon chili paste adjust to taste
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
For the Garnish
  • 2 scallions scallions sliced
  • 1 tablespoon sesame seeds toasted

Method
 

Prepare the Noodles
  1. Cook the egg noodles according to package instructions until al dente. Drain and set aside.
  2. In a large pot, heat vegetable oil over medium heat.
Cook the Shrimp
  1. Add minced garlic and grated ginger to the pot and sauté for 1-2 minutes until fragrant.
  2. Add the shrimp to the pot and cook for about 3-4 minutes, or until they turn pink and opaque.
Make the Sauce
  1. In a small bowl, mix together soy sauce, crushed Szechuan peppercorns, chili paste, rice vinegar, and honey.
  2. Pour the sauce over the cooked shrimp and stir to combine well. Cook for an additional 2 minutes.
Combine and Serve
  1. Add the cooked noodles to the pot and toss everything together until well coated in the sauce.
  2. Serve hot, garnished with sliced scallions and toasted sesame seeds.
