Ingredients
  

For the Base
  • 2 cups cooked chicken breast shredded
  • 4 cups mixed greens such as spinach and arugula
  • 1 cup cherry tomatoes halved
  • 1 cucumber cucumber sliced
For the Tzatziki Dressing
  • 1 cup Greek yogurt
  • 1 medium garlic clove minced
  • 1 tablespoon fresh dill chopped
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare the Tzatziki Dressing
  1. In a bowl, combine the Greek yogurt, minced garlic, chopped dill, lemon juice, salt, and black pepper.
  2. Mix until well combined and set aside in the refrigerator to chill.
Prepare the Salad
  1. In a large mixing bowl, combine the shredded chicken, mixed greens, cherry tomatoes, and sliced cucumber.
  2. Toss gently to combine all the ingredients evenly.
Assemble the Salad
  1. Divide the salad mixture among individual serving bowls.
  2. Drizzle the chilled tzatziki dressing over the top of each salad.
  3. Serve immediately and enjoy your refreshing tzatziki chicken salad.
