Ingredients
  

For the Base
  • 14 ounces firm tofu pressed and cubed
  • 1 tablespoon olive oil for sautéing
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 bell pepper red bell pepper sliced
  • 1 bell pepper green bell pepper sliced
  • 1 can crushed tomatoes about 28 ounces
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
For the Garnish
  • 1/4 cup fresh parsley chopped for serving
  • 1/4 cup grated Parmesan cheese optional for serving

Method
 

Cooking the Tofu
  1. Heat olive oil in a large skillet over medium heat.
  2. Add the cubed tofu and cook until golden brown on all sides, about 8-10 minutes.
Preparing the Sauce
  1. Add the diced onion and minced garlic to the skillet and sauté until the onion is translucent, about 5 minutes.
  2. Stir in the sliced bell peppers and cook for another 5 minutes.
  3. Pour in the crushed tomatoes, oregano, basil, salt, and pepper, and stir well.
Simmering
  1. Bring the mixture to a simmer and let it cook for about 15 minutes, stirring occasionally.
Serving
  1. Once the sauce has thickened slightly, remove from heat.
  2. Serve hot, garnished with chopped parsley and Parmesan cheese if desired.
