Ingredients
  

For the Base
  • 2 cups cooked rice white or brown rice
  • 1 pound chicken breast boneless, skinless
For the Corn Mixture
  • 2 cups corn kernels fresh or frozen
  • 1 red pepper red bell pepper diced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon lime juice freshly squeezed
  • 1 tablespoon cilantro chopped
For the Dressing
  • 2 tablespoons sour cream
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon honey
  • 1 pinch salt

Method
 

Prepare the Chicken
  1. Season the chicken breasts with salt, pepper, and smoked paprika.
  2. Heat a grill or skillet over medium-high heat and cook the chicken for 6-7 minutes on each side until fully cooked.
  3. Remove from heat and let it rest for 5 minutes before slicing.
Prepare the Corn Mixture
  1. In a skillet, heat olive oil over medium heat.
  2. Add corn kernels and diced red bell pepper; sauté for about 5 minutes.
  3. Stir in lime juice, smoked paprika, and chopped cilantro; cook for another 2 minutes.
Make the Dressing
  1. In a small bowl, mix together sour cream, lime juice, honey, and a pinch of salt until smooth.
Assemble the Bowls
  1. Divide the cooked rice among four bowls.
  2. Top each bowl with sliced chicken, corn mixture, and drizzle with the dressing.
  3. Garnish with additional cilantro if desired.
