Ingredients
  

For the Dough
  • 2 cups all-purpose flour
  • 1 cup sourdough starter active and bubbly
  • 1 teaspoon salt
  • 3/4 cup water room temperature
For the Toppings
  • 1 cup pizza sauce
  • 2 cups mozzarella cheese shredded
  • 1/2 cup pepperoni

Method
 

Prepare the Dough
  1. In a large mixing bowl, combine the all-purpose flour and salt.
  2. Add the sourdough starter and room temperature water to the flour mixture.
  3. Mix until a shaggy dough forms, then knead for about 10 minutes until smooth.
  4. Cover the bowl with a damp cloth and let it rest at room temperature for 4-6 hours, or until doubled in size.
Shape the Pizza
  1. Once the dough has risen, punch it down to release excess gas.
  2. Divide the dough into 2 equal portions for 2 pizzas.
  3. Shape each portion into a ball and let them rest for another 30 minutes.
Preheat the Oven
  1. Preheat your oven to the highest setting, usually around 475°F (245°C), and place a pizza stone inside if you have one.
Assemble the Pizza
  1. On a floured surface, stretch or roll out one ball of dough into a 12-inch round.
  2. Spread 1/2 cup of pizza sauce evenly over the dough.
  3. Sprinkle with 1 cup of shredded mozzarella cheese and top with pepperoni.
Bake the Pizza
  1. Carefully transfer the pizza to the preheated oven (or onto the pizza stone).
  2. Bake for 10-15 minutes, or until the crust is golden and the cheese is bubbly.
Serve
  1. Remove the pizza from the oven and let it cool for a few minutes.
  2. Slice and serve hot with your favorite toppings.
