Ingredients
  

For the Base
  • 1 cup sourdough starter active and bubbly
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 3 large eggs
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice
For the Topping
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice for glaze
  • 1 teaspoon lemon zest for garnish

Method
 

Prepare the Cake Batter
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the sourdough starter, lemon zest, and lemon juice until well combined.
  5. In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until just combined.
Bake the Cake
  1. Pour the batter into the prepared cake pan and smooth the top.
  2. Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  3. Once baked, remove from the oven and let the cake cool in the pan for 10 minutes before transferring to a wire rack.
Prepare the Topping
  1. In a small bowl, mix powdered sugar with lemon juice until smooth to create the glaze.
  2. Drizzle the glaze over the cooled cake and sprinkle with lemon zest for garnish.
