Method
Prepare the Batter
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, mix the milk, egg, and melted butter until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
Cook the Sausage
- In a skillet over medium heat, cook the breakfast sausage until browned and fully cooked, about 5-7 minutes.
- Remove from heat and crumble into small pieces.
Make the Pancake Bites
- Preheat the oven to 375°F (190°C) and grease a mini muffin tin.
- Spoon about 1 tablespoon of batter into each muffin cup.
- Add a small amount of cooked sausage on top of the batter in each cup.
- Cover the sausage with another tablespoon of batter, filling each cup about 2/3 full.
Bake
- Bake in the preheated oven for 12-15 minutes, or until golden brown and a toothpick inserted comes out clean.
- Allow to cool for a few minutes before removing from the muffin tin.
Serve
- Serve warm with maple syrup and sliced strawberries if desired.
