Ingredients
  

For the Base
  • 1 pound Italian sausage casings removed
  • 1 medium onion diced
  • 2 cups cauliflower rice
  • 1 cup bell pepper diced
For the Seasoning
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Garnish
  • 1/4 cup parsley chopped

Method
 

  1. In a large skillet over medium heat, add the Italian sausage and cook until browned and cooked through, breaking it up with a spoon, about 5-7 minutes.
  2. Add the diced onion and bell pepper to the skillet. Cook until the vegetables are tender, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the cauliflower rice to the skillet and stir to combine with the sausage and vegetables.
  5. Season the mixture with Italian seasoning, salt, and black pepper. Cook for an additional 5-7 minutes, stirring occasionally, until the cauliflower rice is tender.
  6. Once cooked, remove from heat and garnish with chopped parsley before serving.
