Rasta Pasta Recipe

Ingredients
  

For the Pasta
  • 12 ounces penne pasta
  • 1 tablespoon olive oil for cooking
  • 1 cup heavy cream
  • 1 cup vegetable broth
For the Vegetables
  • 1 cup red bell pepper sliced
  • 1 cup yellow bell pepper sliced
  • 1 cup green bell pepper sliced
  • 1 cup onion sliced
  • 2 cloves garlic minced
For the Seasoning
  • 1 teaspoon jerk seasoning
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
For Garnish
  • 1/4 cup fresh parsley chopped

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente.
  2. Drain the pasta and set aside, reserving 1/2 cup of the pasta water.
Prepare the Sauce
  1. In a large skillet, heat olive oil over medium heat. Add the sliced onions and garlic, and sauté until translucent.
  2. Add the sliced bell peppers and cook for an additional 5 minutes until softened.
  3. Stir in the heavy cream, vegetable broth, jerk seasoning, salt, and pepper. Mix well and simmer for 3-4 minutes.
Combine Pasta and Sauce
  1. Add the cooked pasta to the skillet with the sauce. Stir to combine and add reserved pasta water as needed to reach desired consistency.
  2. Allow to simmer for another 2-3 minutes to heat through.
Serve
  1. Remove from heat and garnish with chopped fresh parsley.
  2. Serve hot and enjoy your Rasta Pasta!

Notes

Feel free to adjust the spice level by adding more or less jerk seasoning. For a vegetarian version, omit any meat and use vegetable broth.
