Prepare the Pulled Pork
- Rub the pork shoulder with smoked paprika, cumin, brown sugar, and salt.
- Place the seasoned pork in a slow cooker and pour barbecue sauce over it.
- Cook on low for 8 hours or high for 4 hours until the pork is tender.
- Once cooked, shred the pork with two forks and mix with the remaining barbecue sauce.
Assemble the Nachos
- Preheat your oven to 350°F (175°C).
- Layer tortilla chips on a large baking sheet.
- Evenly distribute shredded cheddar cheese over the chips.
- Top with the pulled pork mixture and jalapeños.
- Bake in the preheated oven for 10-15 minutes, or until the cheese is melted.
Serve
- Remove the nachos from the oven and let cool slightly.
- Drizzle with sour cream and sprinkle with chopped green onions before serving.
