Method
Prepare the Pork
- In a large pot or Dutch oven, heat the olive oil over medium-high heat.
- Season the pork cubes with salt and pepper, then brown them in batches for about 5-7 minutes until golden on all sides.
- Remove the browned pork and set aside.
Make the Sauce
- In the same pot, add the tomatillos, jalapeños, onion, and garlic.
- Cook over medium heat for about 10 minutes until the tomatillos are soft and slightly charred.
- Transfer the mixture to a blender, add cilantro and cumin, and blend until smooth.
Combine and Simmer
- Return the browned pork to the pot and pour the blended sauce over it.
- Add the chicken broth and bring to a simmer.
- Cover and cook on low heat for about 1.5 hours until the pork is tender.
Serve
- Once the pork is tender, adjust the seasoning with more salt and pepper as needed.
- Serve hot with tortillas, rice, or as a filling for burritos.

For a spicier version, leave some seeds in the jalapeños or add a serrano pepper. This dish can be made ahead of time and reheats well.
