Ingredients
  

For the Salmon
  • 4 fillets salmon about 6 oz each
  • 1 teaspoon olive oil for brushing
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
For the Crust
  • 1 cup pistachios unsalted, shelled
  • 1/4 cup fresh parsley chopped
  • 2 tablespoons fresh dill chopped
  • 1 clove garlic minced
  • 2 tablespoons bread crumbs optional, for extra crunch
  • 1 tablespoon lemon zest for brightness

Method
 

Prepare the Salmon
  1. Preheat the oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper and place the salmon fillets on it.
  3. Brush the salmon fillets with olive oil and sprinkle with salt and black pepper.
Make the Pistachio Crust
  1. In a food processor, combine the pistachios, parsley, dill, garlic, bread crumbs, and lemon zest.
  2. Pulse until the mixture is finely chopped and combined, but not pureed.
Crust the Salmon
  1. Evenly distribute the pistachio mixture over the top of each salmon fillet, pressing it gently to adhere.
Bake
  1. Bake the salmon in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork and the crust is golden brown.
Serve
  1. Remove from the oven and let cool for a few minutes before serving.
  2. Serve with a side of steamed vegetables or a fresh salad.
