Method
Prepare the Salmon
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper and place the salmon fillets on it.
- Brush the salmon fillets with olive oil and sprinkle with salt and black pepper.
Make the Pistachio Crust
- In a food processor, combine the pistachios, parsley, dill, garlic, bread crumbs, and lemon zest.
- Pulse until the mixture is finely chopped and combined, but not pureed.
Crust the Salmon
- Evenly distribute the pistachio mixture over the top of each salmon fillet, pressing it gently to adhere.
Bake
- Bake the salmon in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork and the crust is golden brown.
Serve
- Remove from the oven and let cool for a few minutes before serving.
- Serve with a side of steamed vegetables or a fresh salad.
