Ingredients
  

For the Base
  • 1 box yellow cake mix
  • 1/2 cup unsalted butter melted
  • 1 large egg
For the Filling
  • 1 block cream cheese softened
  • 1 cup powdered sugar
  • 1 cup pistachio pudding mix
  • 3 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
For the Garnish
  • 1/2 cup chopped pistachios for topping

Method
 

Prepare the Base
  1. Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking pan.
  2. In a mixing bowl, combine the yellow cake mix, melted butter, and 1 egg. Mix until well combined.
  3. Spread the cake mixture evenly into the prepared baking pan.
Make the Filling
  1. In a separate bowl, beat the softened cream cheese until smooth.
  2. Add the powdered sugar, pistachio pudding mix, eggs, milk, and vanilla extract. Mix until well blended.
  3. Pour the filling over the cake base in the baking pan.
Bake the Cake
  1. Bake in the preheated oven for 40 minutes, or until the top is set but the center is still gooey.
  2. Remove from the oven and allow to cool in the pan for at least 30 minutes.
Garnish and Serve
  1. Once cooled, sprinkle the chopped pistachios over the top of the cake.
  2. Cut into squares and serve warm or at room temperature.
