Method
Prepare the Base
- Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking pan.
- In a mixing bowl, combine the yellow cake mix, melted butter, and 1 egg. Mix until well combined.
- Spread the cake mixture evenly into the prepared baking pan.
Make the Filling
- In a separate bowl, beat the softened cream cheese until smooth.
- Add the powdered sugar, pistachio pudding mix, eggs, milk, and vanilla extract. Mix until well blended.
- Pour the filling over the cake base in the baking pan.
Bake the Cake
- Bake in the preheated oven for 40 minutes, or until the top is set but the center is still gooey.
- Remove from the oven and allow to cool in the pan for at least 30 minutes.
Garnish and Serve
- Once cooled, sprinkle the chopped pistachios over the top of the cake.
- Cut into squares and serve warm or at room temperature.
