Ingredients
  

For the Base
  • 2 cans pineapple chunks drained
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
For the Topping
  • 1 cup crushed cornflakes
  • 1/2 cup melted butter

Method
 

Prepare the Base
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the drained pineapple chunks, sour cream, shredded cheddar cheese, sugar, and vanilla extract. Mix well until all ingredients are evenly combined.
Assemble the Casserole
  1. Pour the pineapple mixture into a greased 9x13 inch baking dish, spreading it evenly across the dish.
Prepare the Topping
  1. In a separate bowl, mix together the crushed cornflakes and melted butter until the cornflakes are well coated.
  2. Sprinkle the cornflake mixture evenly over the pineapple base in the baking dish.
Bake the Casserole
  1. Place the baking dish in the preheated oven and bake for 30 minutes, or until the topping is golden brown and crispy.
