Prepare the Pesto
- In a food processor, combine the basil leaves, parmesan cheese, pine nuts, and garlic.
- With the processor running, slowly drizzle in the olive oil until the mixture is smooth and well combined. Set aside.
Cook the Chicken
- Season the chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium heat.
- Add the chicken breasts to the skillet and cook for about 6-7 minutes on each side, or until fully cooked (internal temperature reaches 165°F).
Combine and Serve
- Once the chicken is cooked, remove it from the skillet and let it rest for a few minutes.
- Spread a generous amount of pesto over each chicken breast.
- Serve warm, garnished with additional parmesan if desired.
