Ingredients
  

For the Base
  • 1 cup unsalted butter softened
  • 2 cups all-purpose flour
  • 1 cup powdered sugar
  • 1 cup pecans finely chopped
  • 1 teaspoon vanilla extract
For the Topping
  • 1 cup powdered sugar for rolling

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and 1 cup of powdered sugar until light and fluffy.
  3. Add the vanilla extract and mix well.
  4. Gradually add the flour and mix until just combined.
  5. Fold in the chopped pecans until evenly distributed.
  6. Using your hands, form the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.
  7. Bake in the preheated oven for 20-25 minutes, or until the bottoms are lightly golden but the tops remain pale.
  8. Remove from the oven and let them cool for about 10 minutes before rolling them in the remaining powdered sugar.
