- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and 1 cup of powdered sugar until light and fluffy.
- Add the vanilla extract and mix well.
- Gradually add the flour and mix until just combined.
- Fold in the chopped pecans until evenly distributed.
- Using your hands, form the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.
- Bake in the preheated oven for 20-25 minutes, or until the bottoms are lightly golden but the tops remain pale.
- Remove from the oven and let them cool for about 10 minutes before rolling them in the remaining powdered sugar.
