Ingredients
  

For the Crust
  • 1 cup all-purpose flour
  • 1/4 cup unsalted butter cold and cubed
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 2-3 tablespoons ice water
For the Filling
  • 1 cup light corn syrup
  • 3/4 cup brown sugar packed
  • 1/4 cup unsalted butter melted
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups pecan halves toasted if desired
For the Topping
  • 1 cup heavy cream for whipping
  • 2 tablespoons powdered sugar
  • 1/2 cup toasted pecans for garnish

Method
 

Prepare the Crust
  1. In a mixing bowl, combine the flour, sugar, and cold butter until crumbly.
  2. Add the egg yolk and ice water, mixing until a dough forms.
  3. Press the dough into a pie dish and refrigerate for 15 minutes.
  4. Preheat the oven to 350°F (175°C).
  5. Bake the crust for 15 minutes until lightly golden. Let it cool.
Make the Filling
  1. In a large bowl, whisk together the corn syrup, brown sugar, melted butter, eggs, and vanilla until smooth.
  2. Fold in the pecans until evenly distributed.
Assemble and Bake
  1. Pour the filling into the pre-baked crust and spread evenly.
  2. Bake for 30-35 minutes or until the filling is set and slightly puffed.
  3. Remove from the oven and allow to cool completely.
Prepare the Topping
  1. In a mixing bowl, whip the heavy cream with powdered sugar until soft peaks form.
  2. Spread the whipped cream over the cooled pie.
  3. Sprinkle with toasted pecans for garnish.
Serve
  1. Slice the pie and serve chilled or at room temperature.
