Ingredients
  

For the Base
  • 2 cups all-purpose flour
  • 1 cup brown sugar packed
  • 1/2 cup unsalted butter melted
  • 1 large egg
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
For the Filling
  • 4 cups fresh peaches sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
For the Topping
  • 1 cup oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/2 cup unsalted butter melted
  • 1/2 teaspoon cinnamon

Method
 

Prepare the Base
  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a large bowl, combine flour, brown sugar, melted butter, egg, baking powder, and salt. Mix until crumbly.
  3. Press the mixture evenly into the bottom of the prepared baking dish. Bake for 15 minutes.
Prepare the Filling
  1. In a separate bowl, combine sliced peaches, granulated sugar, lemon juice, and cornstarch. Toss to coat the peaches evenly.
Prepare the Topping
  1. In another bowl, mix oats, flour, brown sugar, melted butter, and cinnamon until crumbly.
Assemble the Bars
  1. After the base has baked for 15 minutes, remove it from the oven and spread the peach mixture evenly over the crust.
  2. Sprinkle the oat topping evenly over the peaches.
Bake
  1. Return the dish to the oven and bake for an additional 20-25 minutes, or until the topping is golden brown.
Cool and Serve
  1. Allow the bars to cool in the pan for at least 30 minutes before slicing into squares.
  2. Serve warm or at room temperature, and enjoy!

Notes
