Method
Prepare the Base
- Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- In a large bowl, combine flour, brown sugar, melted butter, egg, baking powder, and salt. Mix until crumbly.
- Press the mixture evenly into the bottom of the prepared baking dish. Bake for 15 minutes.

- In a separate bowl, combine sliced peaches, granulated sugar, lemon juice, and cornstarch. Toss to coat the peaches evenly.
Prepare the Topping
- In another bowl, mix oats, flour, brown sugar, melted butter, and cinnamon until crumbly.
Assemble the Bars
- After the base has baked for 15 minutes, remove it from the oven and spread the peach mixture evenly over the crust.
- Sprinkle the oat topping evenly over the peaches.
Bake
- Return the dish to the oven and bake for an additional 20-25 minutes, or until the topping is golden brown.
Cool and Serve
- Allow the bars to cool in the pan for at least 30 minutes before slicing into squares.
- Serve warm or at room temperature, and enjoy!
