Ingredients
  

For the Base
  • 1 tablespoon olive oil for sautéing
  • 1 cup carrots diced
  • 1 cup celery diced
  • 1 cup onion diced
  • 4 cups vegetable broth or chicken broth
  • 1 cup pastina
For the Topping
  • 1/4 cup fresh parsley chopped
  • 1/2 cup grated Parmesan cheese

Method
 

Prepare the Base
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced carrots, celery, and onion; sauté for about 5 minutes until softened.
  3. Pour in the vegetable broth and bring to a simmer.
Cook the Pastina
  1. Once the broth is simmering, add the pastina and cook for 7-10 minutes, or until al dente.
Finish and Serve
  1. Remove from heat and stir in the chopped parsley.
  2. Ladle the soup into bowls and top with grated Parmesan cheese.
  3. Serve hot and enjoy!

Notes
