Cook the Chicken
- In a large skillet, heat the vegetable oil over medium heat.
- Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
Add Vegetables
- Add the sliced mushrooms, broccoli florets, and red bell pepper to the skillet.
- Stir-fry the vegetables with the chicken for another 5 minutes, until they are tender.
Prepare the Sauce
- In a small bowl, whisk together soy sauce, cornstarch, chicken broth, rice vinegar, honey, garlic, and ginger.
Combine and Thicken
- Pour the sauce over the chicken and vegetables in the skillet.
- Bring to a simmer and cook for 2-3 minutes, stirring constantly, until the sauce has thickened.
Serve
- Remove from heat and serve hot over rice or noodles.
- Garnish with additional sliced green onions if desired.
