Ingredients
  

For the Base
  • 1 pound boneless skinless chicken breasts cut into bite-sized pieces
  • 2 cups button mushrooms sliced
  • 1 cup broccoli florets
  • 1 cup red bell pepper sliced
For the Sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1 cup chicken broth
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or sugar
  • 1 teaspoon garlic minced
  • 1 teaspoon ginger minced
  • 1 tablespoon vegetable oil

Method
 

Cook the Chicken
  1. In a large skillet, heat the vegetable oil over medium heat.
  2. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
Add Vegetables
  1. Add the sliced mushrooms, broccoli florets, and red bell pepper to the skillet.
  2. Stir-fry the vegetables with the chicken for another 5 minutes, until they are tender.
Prepare the Sauce
  1. In a small bowl, whisk together soy sauce, cornstarch, chicken broth, rice vinegar, honey, garlic, and ginger.
Combine and Thicken
  1. Pour the sauce over the chicken and vegetables in the skillet.
  2. Bring to a simmer and cook for 2-3 minutes, stirring constantly, until the sauce has thickened.
Serve
  1. Remove from heat and serve hot over rice or noodles.
  2. Garnish with additional sliced green onions if desired.
