Ingredients
  

For the Marinade
  • 4 legs chicken legs
  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • 6 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For Baking
  • 1 tablespoon olive oil
  • 1 cup fresh cilantro for garnish

Method
 

Marinating the Chicken
  1. In a bowl, combine orange juice, lime juice, minced garlic, cumin, oregano, salt, and black pepper. Mix well.
  2. Place the chicken legs in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are coated.
  3. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight for maximum flavor.
Baking the Chicken
  1. Preheat the oven to 400°F (200°C).
  2. Remove the chicken from the marinade and discard the marinade.
  3. In a large baking dish, drizzle olive oil and then arrange the chicken legs in a single layer.
  4. Bake in the preheated oven for 35-45 minutes, or until the chicken is cooked through and the skin is crispy. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).
Serving
  1. Once cooked, remove the chicken from the oven and let it rest for 5 minutes.
  2. Garnish with fresh cilantro before serving.
