Ingredients
  

For the Broth
  • 4 cups chicken broth
  • 2 tablespoons miso paste white or yellow
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
For the Noodles
  • 12 ounces ramen noodles fresh or dried
For the Toppings
  • 2 eggs large eggs soft-boiled
  • 1 cup scallions sliced
  • 1 cup nori sheets cut into strips
  • 1 cup bean sprouts
For the Miso Butter
  • 4 tablespoons unsalted butter softened
  • 1 tablespoon miso paste white or yellow

Method
 

Prepare the Broth
  1. In a large pot, combine the chicken broth, miso paste, soy sauce, and sesame oil. Stir until the miso is fully dissolved.
  2. Bring the mixture to a simmer over medium heat and let cook for about 10 minutes to allow the flavors to meld.
Cook the Noodles
  1. In a separate pot, bring water to a boil and cook the ramen noodles according to package instructions until al dente.
  2. Drain the noodles and set aside, reserving a small amount of the cooking water.
Make the Miso Butter
  1. In a small bowl, mix together the softened butter and miso paste until well combined.
Assemble the Ramen
  1. Divide the cooked noodles among four bowls.
  2. Ladle the hot broth over the noodles in each bowl.
  3. Add a spoonful of miso butter to each bowl, allowing it to melt into the hot broth.
Add Toppings
  1. Top each bowl with soft-boiled eggs, sliced scallions, nori strips, and bean sprouts.
