Ingredients
  

For the Meatballs
  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 1 large egg
  • 1 tablespoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Base
  • 2 cups cooked quinoa
  • 1 cup cherry tomatoes halved
  • 1 cucumber cucumber diced
  • 1 cup baby spinach
For the Yogurt Sauce
  • 1 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill chopped
  • 1 clove garlic minced
  • 1/2 teaspoon salt

Method
 

Prepare the Meatballs
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, breadcrumbs, egg, oregano, garlic powder, onion powder, salt, and pepper.
  3. Mix until well combined, then form into 1-inch meatballs.
  4. Place meatballs on a baking sheet lined with parchment paper.
  5. Bake for 20-25 minutes or until cooked through and browned.
Prepare the Base
  1. While the meatballs are baking, prepare the quinoa according to package instructions if not already cooked.
  2. In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, and baby spinach.
Make the Yogurt Sauce
  1. In a small bowl, mix together Greek yogurt, lemon juice, dill, minced garlic, and salt.
  2. Stir until smooth and well combined.
Assemble the Bowls
  1. Divide the quinoa mixture among four serving bowls.
  2. Top each bowl with baked meatballs and a drizzle of yogurt sauce.
  3. Garnish with additional dill if desired.
