For the Base
  • 2 cups all-purpose flour
  • 1 cup granulated sugar

  • 2 teaspoons matcha powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
For the Frosting
  • 1 cup powdered sugar
  • 2 tablespoons unsalted butter softened
  • 1 tablespoon lime juice
  • 1 teaspoon matcha powder

Method
 

Make the Cookie Dough
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg, lime juice, and lime zest until well combined.
  4. In a separate bowl, whisk together the flour, matcha powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Bake the Cookies
  1. Drop tablespoon-sized balls of dough onto the prepared baking sheet, leaving space between each cookie.
  2. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  3. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Prepare the Frosting
  1. In a medium bowl, beat together the softened butter and powdered sugar until smooth.
  2. Add the lime juice and matcha powder, mixing until well combined and smooth.
Frost the Cookies
  1. Once the cookies have cooled, spread a layer of the matcha lime frosting on top of each cookie.
  2. Optionally, garnish with a sprinkle of matcha powder or lime zest for extra flavor and presentation.
