Ingredients
  

For the Salmon
  • 4 fillets salmon about 6 oz each
  • 2 tablespoons olive oil
  • 2 tablespoons fresh dill chopped
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Cucumber Salad
  • 2 cups cucumber sliced
  • 1 cup tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare the Salmon
  1. In a small bowl, whisk together the olive oil, dill, lemon juice, minced garlic, salt, and pepper.
  2. Place the salmon fillets in a shallow dish and pour the marinade over them. Let marinate for at least 10 minutes.
Grill the Salmon
  1. Preheat the grill to medium-high heat.
  2. Remove the salmon from the marinade and discard the marinade.
  3. Place the salmon on the grill and cook for about 4-5 minutes on each side, or until the salmon flakes easily with a fork.
Prepare the Cucumber Salad
  1. In a large bowl, combine the sliced cucumber, halved tomatoes, and red onion.
  2. In a small bowl, whisk together the olive oil, white wine vinegar, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
Serve
  1. Plate the grilled salmon with a generous serving of cucumber salad on the side.
  2. Garnish with additional dill and lemon wedges if desired.
