Ingredients
  

For the Base
  • 4 corn tortillas corn tortillas
  • 1 cup black beans cooked and seasoned
For the Sauce
  • 2 medium tomatoes chopped
  • 1 small onion chopped
  • 1 clove garlic minced
  • 1 jalapeño jalapeño seeded and minced
  • 1 teaspoon ground cumin
  • 1 tablespoon olive oil
  • 1 cup water or vegetable broth
For Topping
  • 4 large eggs fried sunny-side up
  • 1 avocado avocado sliced
  • 1/4 cup fresh cilantro chopped
  • 1/2 cup feta cheese crumbled

Method
 

Prepare the Sauce
  1. Heat olive oil in a saucepan over medium heat.
  2. Add chopped onion and garlic; sauté until softened, about 3 minutes.
  3. Stir in chopped tomatoes, jalapeño, and ground cumin; cook for 5 minutes.
  4. Add water or vegetable broth; simmer for another 5-7 minutes until thickened.
Prepare the Base
  1. Warm the corn tortillas in a dry skillet over medium heat, about 30 seconds per side.
  2. Spread the black beans evenly over each tortilla.
Fry the Eggs
  1. In a separate skillet, fry the eggs sunny-side up to your desired doneness.
Assemble the Dish
  1. Place a fried egg on top of each tortilla with beans.
  2. Spoon the tomato sauce over the eggs.
  3. Garnish with sliced avocado, chopped cilantro, and crumbled feta cheese.

Notes
