Ingredients
  

For the Soup Base
  • 1 pound ground beef preferably lean
  • 1 large onion diced
  • 2 cloves garlic minced
  • 3 cups beef broth low sodium
  • 2 cups potatoes cubed
  • 1 cup carrots sliced
  • 1 cup green beans trimmed and cut
  • 1 can diced tomatoes with juice
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For Garnish
  • 1/4 cup fresh parsley chopped

Method
 

Cooking the Soup
  1. In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Add diced onion and minced garlic to the pot, sautéing until the onion is translucent, about 5 minutes.
  3. Pour in the beef broth and bring the mixture to a simmer.
  4. Add cubed potatoes, sliced carrots, green beans, diced tomatoes, Italian seasoning, salt, and black pepper.
  5. Cover and let simmer for 20 minutes, or until the vegetables are tender.
  6. Taste and adjust seasoning if necessary.
  7. Serve hot, garnished with chopped parsley.

Notes
