Cooking the Soup
- In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat.
- Add diced onion and minced garlic to the pot, sautéing until the onion is translucent, about 5 minutes.
- Pour in the beef broth and bring the mixture to a simmer.
- Add cubed potatoes, sliced carrots, green beans, diced tomatoes, Italian seasoning, salt, and black pepper.
- Cover and let simmer for 20 minutes, or until the vegetables are tender.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with chopped parsley.
