Ingredients
  

For the Base
  • 1 pound ground beef preferably 80/20
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1 teaspoon olive oil
For the Flavoring
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For Serving
  • 4 cups cooked rice or quinoa

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the ground beef to the skillet, breaking it apart with a spatula.
  5. Cook until browned, about 5-7 minutes, and drain excess fat.
  6. Stir in the parsley, lemon juice, lemon zest, salt, and pepper.
  7. Cook for another 2 minutes to combine flavors.
  8. Serve hot over a bed of cooked rice or quinoa.

Notes
