Ingredients
  

For the Base
  • 2 cups brown rice cooked
  • 1 cup black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 cup salsa
For the Beef
  • 1 pound ground beef 85% lean
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
For the Toppings
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup sour cream
  • 1 cup fresh cilantro chopped
  • 1 medium avocado sliced

Method
 

Prepare the Base
  1. Cook the brown rice according to package instructions. Set aside once done.
  2. In a bowl, combine black beans, corn, and salsa. Mix well and set aside.
Cook the Beef
  1. In a large skillet over medium heat, add the ground beef.
  2. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  3. Drain excess fat, then stir in chili powder, cumin, garlic powder, salt, and black pepper.
  4. Cook for an additional 2-3 minutes, allowing the spices to blend with the beef.
Assemble the Bowls
  1. In serving bowls, start with a base of brown rice.
  2. Top with the black bean and corn mixture.
  3. Add the cooked ground beef on top.
  4. Finish with shredded cheese, sour cream, cilantro, and avocado slices.
Serve
  1. Serve immediately while warm and enjoy!
