Ingredients
  

For the Pork Chops
  • 4 pieces pork chops about 1 inch thick
  • 2 tablespoons olive oil for grilling
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
For the Ladorigano Sauce
  • 1 cup fresh basil leaves packed
  • 1/2 cup parsley leaves packed
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic peeled
  • 1/3 cup pine nuts or walnuts
  • 1/2 cup olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon salt to taste

Method
 

Prepare the Pork Chops
  1. Preheat the grill to medium-high heat.
  2. Rub the pork chops with olive oil, salt, and pepper on both sides.
  3. Let the pork chops sit at room temperature for about 10 minutes to absorb the flavors.
Make the Ladorigano Sauce
  1. In a food processor, combine the basil, parsley, Parmesan cheese, garlic, and pine nuts.
  2. Pulse until the mixture is finely chopped.
  3. With the processor running, slowly drizzle in the olive oil until the sauce is smooth.
  4. Add lemon juice and salt, then pulse a few more times to combine.
Grill the Pork Chops
  1. Place the pork chops on the preheated grill.
  2. Grill for 6-7 minutes on each side, or until the internal temperature reaches 145°F (63°C).
  3. Remove from the grill and let rest for 5 minutes.
Serve
  1. Plate the grilled pork chops and drizzle generously with Ladorigano sauce.
  2. Garnish with additional Parmesan cheese and fresh herbs if desired.
  3. Serve immediately and enjoy!
