Method
Marinating the Lamb
- In a bowl, combine olive oil, minced garlic, chopped rosemary, salt, and black pepper.
- Add the lamb chops to the marinade and coat evenly. Cover and refrigerate for at least 1 hour, or up to overnight.
Grilling the Lamb
- Preheat the grill to medium-high heat.
- Remove the lamb chops from the marinade and discard the marinade.
- Place the lamb chops on the grill and cook for 3-4 minutes on each side for medium-rare.
- Use a meat thermometer to ensure the internal temperature reaches 145°F (63°C).
Serving
- Remove the lamb chops from the grill and let them rest for 5 minutes.
- Serve the grilled lamb chops with lemon slices and mixed greens.
