Prepare the Potatoes
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the halved baby potatoes with olive oil, paprika, garlic powder, and salt.
- Spread the potatoes on a baking sheet in a single layer.
- Roast in the preheated oven for 20-25 minutes or until golden and crispy, stirring halfway through.
Cook the Steak Bites
- While the potatoes are roasting, heat 2 tablespoons of butter in a large skillet over medium-high heat.
- Once the butter is melted and bubbling, add the steak bites in a single layer, seasoning with salt and pepper.
- Sear the steak for about 3-4 minutes without moving, then flip and cook for another 3-4 minutes for medium-rare.
- Add the minced garlic and remaining 2 tablespoons of butter to the pan, stirring to coat the steak bites in the garlic butter.
- Cook for an additional 1-2 minutes until the garlic is fragrant.
- Remove from heat and sprinkle with chopped parsley before serving.
Serve
- Serve the garlic butter steak bites on a platter alongside the crispy potatoes.
- Drizzle any remaining garlic butter from the skillet over the steak bites for extra flavor.
