Ingredients
  

For the Steak Bites
  • 1.5 pounds sirloin steak cut into bite-sized pieces
  • 4 tablespoons butter divided
  • 4 cloves garlic minced
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 tablespoon fresh parsley chopped, for garnish
For the Crispy Potatoes
  • 1.5 pounds baby potatoes halved
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt to taste

Method
 

Prepare the Potatoes
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the halved baby potatoes with olive oil, paprika, garlic powder, and salt.
  3. Spread the potatoes on a baking sheet in a single layer.
  4. Roast in the preheated oven for 20-25 minutes or until golden and crispy, stirring halfway through.
Cook the Steak Bites
  1. While the potatoes are roasting, heat 2 tablespoons of butter in a large skillet over medium-high heat.
  2. Once the butter is melted and bubbling, add the steak bites in a single layer, seasoning with salt and pepper.
  3. Sear the steak for about 3-4 minutes without moving, then flip and cook for another 3-4 minutes for medium-rare.
  4. Add the minced garlic and remaining 2 tablespoons of butter to the pan, stirring to coat the steak bites in the garlic butter.
  5. Cook for an additional 1-2 minutes until the garlic is fragrant.
  6. Remove from heat and sprinkle with chopped parsley before serving.
Serve
  1. Serve the garlic butter steak bites on a platter alongside the crispy potatoes.
  2. Drizzle any remaining garlic butter from the skillet over the steak bites for extra flavor.

Notes
