Ingredients
  

For the Base
  • 4 slices whole grain bread toasted
  • 2 large eggs beaten
  • 1 tablespoon butter for cooking
For the Topping
  • 1 cup fresh spinach washed and dried
  • 2 tablespoons mayonnaise or to taste
  • 1 medium tomato sliced
  • 1 pinch salt to taste
  • 1 pinch pepper to taste

Method
 

Preparing the Eggs
  1. In a small skillet, melt butter over medium heat.
  2. Add beaten eggs to the skillet, stirring gently until they are softly scrambled, about 3-4 minutes. Season with salt and pepper to taste.
Assembling the Sandwich
  1. Spread mayonnaise on one side of each slice of toasted bread.
  2. Layer fresh spinach on two slices of bread, followed by the scrambled eggs and tomato slices.
  3. Top with the remaining slices of bread, mayonnaise side down.
Serving
