  • 2 cans butter beans drained and rinsed
  • 1 tablespoon olive oil for sautéing
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 can crushed tomatoes
  • 1 cup vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
For the Creaminess
  • 1/2 cup heavy cream or coconut cream for a vegan option
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the crushed tomatoes, vegetable broth, oregano, paprika, salt, and pepper to the skillet.
  5. Bring the mixture to a simmer and cook for 10 minutes, allowing the flavors to meld.
  6. Add the drained butter beans to the skillet and stir gently to combine.
  7. Stir in the heavy cream and simmer for another 5-10 minutes until heated through and creamy.
  8. Serve hot, garnished with chopped parsley.
