Ingredients
  

For the Base
  • 2 pounds russet potatoes peeled and quartered
  • 1/2 cup heavy cream
  • 4 tablespoons unsalted butter softened
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper or to taste
For the Garnish
  • 2 tablespoons chives finely chopped

Method
 

Prepare the Potatoes
  1. Place the peeled and quartered russet potatoes in a large pot and cover them with cold water.
  2. Add salt to the water and bring it to a boil over high heat.
  3. Once boiling, reduce the heat to medium and let the potatoes cook for about 15-20 minutes, or until fork-tender.
Mash the Potatoes
  1. Drain the potatoes and return them to the pot.
  2. Add the softened butter and heavy cream to the potatoes.
  3. Using a potato masher or a hand mixer, mash the potatoes until smooth and creamy.
Season and Serve
  1. Season the mashed potatoes with salt and black pepper to taste.
  2. Transfer the mashed potatoes to a serving dish and sprinkle with chopped chives for garnish.
  3. Serve warm alongside your favorite main dishes.
