Ingredients
  

For the Chicken
  • 4 pieces chicken breasts boneless, skinless
  • 1 cup all-purpose flour for dredging
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
For the Sauce
  • 1 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tablespoons capers drained
  • 1/2 cup heavy cream
  • 1 tablespoon fresh parsley chopped, for garnish

Method
 

Prepare the Chicken
  1. Season the chicken breasts with salt and pepper on both sides.
  2. Dredge each chicken breast in flour, shaking off the excess.
  3. In a large skillet, heat the olive oil and butter over medium-high heat.
  4. Add the chicken breasts and cook for about 5-7 minutes per side, until golden brown and cooked through. Remove from skillet and set aside.
Make the Sauce
  1. In the same skillet, add the chicken broth, lemon juice, and capers, scraping up any browned bits from the bottom of the pan.
  2. Bring the mixture to a boil and let it reduce for about 3-4 minutes.
  3. Lower the heat and stir in the heavy cream, cooking until the sauce is heated through and slightly thickened.
Combine and Serve
  1. Return the cooked chicken to the skillet, coating it in the creamy sauce.
  2. Cook for an additional 2 minutes to heat the chicken through.
  3. Garnish with fresh parsley and serve immediately over pasta or rice.
