Method
Prepare the Base
- Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking dish.
- In a mixing bowl, combine the flour, sugar, melted butter, and salt. Stir until well blended.
- Press the mixture evenly into the bottom of the prepared baking dish.
- Bake for 15 minutes or until lightly golden.
Make the Filling
- In another bowl, whisk together the eggs and sugar until smooth.
- Add the lemon juice, lemon zest, and flour to the egg mixture. Mix until combined.
- Fold in the chopped cranberries until evenly distributed.
Assemble and Bake
- Pour the filling over the pre-baked crust, spreading it evenly.
- Return the dish to the oven and bake for an additional 15-20 minutes until the filling is set.
Cool and Serve
- Remove from the oven and let cool completely in the pan.
- Once cooled, dust with powdered sugar and cut into squares.
- Serve chilled or at room temperature.
