  • 1 pound boneless, skinless chicken breasts cubed
  • 1 cup potato gnocchi
  • 2 cups chicken broth
  • 1 cup fresh spinach

  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
For Garnish
  • 1/4 cup grated Parmesan cheese

Method
 

Cooking the Chicken
  1. In a large skillet, heat the olive oil over medium heat. Add the cubed chicken and cook until browned, about 5-7 minutes.
  2. Add the minced garlic and Italian seasoning, and cook for an additional 1-2 minutes until fragrant.
Making the Sauce
  1. Pour in the chicken broth and bring to a simmer. Allow it to cook for about 5 minutes.
  2. Stir in the heavy cream and let the mixture simmer for another 5 minutes until slightly thickened.
Cooking the Gnocchi
  1. Add the potato gnocchi to the skillet and cook according to package instructions, usually about 2-3 minutes.
  2. Add the fresh spinach and stir until wilted, about 2 minutes.
Finishing Touches
  1. Remove from heat and sprinkle with grated Parmesan cheese and chopped parsley before serving.
