Ingredients
  

For the Dough
  • 2 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 1 cup unsalted butter cold and cubed
  • 1/2 cup cream cheese softened
  • 1 large egg beaten for egg wash
For the Filling
  • 1 cup ricotta cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 large egg lightly beaten
For the Glaze
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Method
 

Prepare the Dough
  1. In a large bowl, combine the flour, sugar, and salt.
  2. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Add 1/4 cup of cold water and mix until the dough comes together. Wrap in plastic and refrigerate for at least 30 minutes.
Make the Filling
  1. In a medium bowl, mix together the ricotta cheese, powdered sugar, vanilla extract, and beaten egg until smooth.
Assemble the Danishes
  1. Preheat the oven to 375°F (190°C).
  2. Roll out the chilled dough on a floured surface to about 1/4 inch thick.
  3. Cut the dough into squares, about 4x4 inches, and place them on a baking sheet lined with parchment paper.
  4. Spoon a dollop of the cheese filling in the center of each square.
  5. Fold the corners of the dough over the filling to create a diamond shape and brush with the beaten egg.
Bake the Danishes
  1. Bake in the preheated oven for 20-25 minutes or until golden brown.
Prepare the Glaze
  1. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
  2. Drizzle over the warm cheese danishes once they have cooled slightly.

Notes
