Ingredients
  

For the Chicken
  • 4 pieces chicken breasts boneless and skinless
  • 2 tablespoons olive oil for cooking
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Topping
  • 1 cup fresh mozzarella cheese sliced
  • 2 cups cherry tomatoes halved
  • 1/4 cup fresh basil leaves torn
  • 3 tablespoons balsamic glaze for drizzling

Method
 

Prepare the Chicken
  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Season the chicken breasts with Italian seasoning, salt, and pepper on both sides.
  4. Sear the chicken breasts in the skillet for about 4-5 minutes on each side until golden brown.
  5. Transfer the seared chicken to a baking dish.
Add the Toppings
  1. Layer the sliced mozzarella cheese on top of each chicken breast.
  2. Evenly distribute the halved cherry tomatoes over the chicken.
  3. Sprinkle the torn basil leaves on top.
Bake the Dish
  1. Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and the cheese is melted.
  2. Check that the internal temperature of the chicken reaches 165°F (75°C).
Serve
  1. Remove from the oven and drizzle with balsamic glaze before serving.
  2. Serve hot with a side salad or your favorite vegetables.

Notes
