Ingredients
  

For the Grits
  • 1 cup grits
  • 4 cups water
  • 1 cup shredded cheddar cheese
  • 2 tablespoons butter
  • 1 teaspoon salt
For the Shrimp and Sausage
  • 1 pound shrimp peeled and deveined
  • 8 ounces Andouille sausage sliced
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • 1 cup bell pepper diced
  • 1 cup onion diced
  • 2 cloves garlic minced
  • 1 cup chicken broth
  • 1 tablespoon fresh parsley chopped for garnish

Method
 

Prepare the Grits
  1. In a medium saucepan, bring water to a boil. Add salt.
  2. Slowly whisk in the grits and reduce heat to low. Cook, stirring occasionally, until grits are thickened, about 20 minutes.
  3. Stir in butter and cheddar cheese until melted and creamy. Keep warm.
Cook the Shrimp and Sausage
  1. In a large skillet, heat olive oil over medium heat. Add the sliced Andouille sausage and cook until browned, about 5 minutes.
  2. Add the diced bell pepper, onion, and garlic to the skillet. Sauté until softened, about 5 minutes.
  3. Stir in the shrimp and Cajun seasoning. Cook until shrimp are pink and opaque, about 3-5 minutes.
  4. Pour in the chicken broth and simmer for an additional 2-3 minutes until slightly thickened. Remove from heat.
Serve
  1. Spoon the creamy grits onto plates or bowls.
  2. Top with the Cajun shrimp and sausage mixture.
  3. Garnish with chopped parsley before serving.
