Ingredients
  

For the Base
  • 1 cup cottage cheese preferably low-fat
  • 1 cup milk whole or low-fat
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
For the Topping
  • 1 cup fresh blueberries or frozen

Method
 

Prepare the Muffin Batter
  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the cottage cheese, milk, eggs, vegetable oil, and vanilla extract. Whisk until well blended.
  3. In another bowl, mix the flour, sugar, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
Add the Blueberries
  1. Gently fold in the blueberries, being careful not to break them.
Bake the Muffins
  1. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  2. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean.
Cool and Serve
  1. Remove the muffins from the oven and let them cool in the tin for 5 minutes.
  2. Transfer the muffins to a wire rack to cool completely before serving.

Notes
