Ingredients
  

For the Chocolate Cake
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup boiling water
For the Cherry Layer
  • 2 cups pitted cherries fresh or frozen
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
For the Mascarpone Cream
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
For Assembly
  • 1/2 cup chocolate shavings for garnish
  • 1/4 cup cherries for garnish

Method
 

Prepare the Chocolate Cake
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add egg, milk, vegetable oil, and vanilla extract. Mix until combined.
  4. Stir in the boiling water until the batter is smooth. Pour into the prepared cake pan.
  5. Bake for 25 minutes or until a toothpick inserted comes out clean. Let cool completely.
Prepare the Cherry Layer
  1. In a saucepan, combine pitted cherries, sugar, cornstarch, and lemon juice.
  2. Cook over medium heat until the mixture bubbles and thickens, about 5-7 minutes. Remove from heat and let cool.
Prepare the Mascarpone Cream
  1. In a mixing bowl, whisk together mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until soft peaks form.
Assemble the Trifle
  1. Cut the cooled chocolate cake into cubes.
  2. In a large trifle dish or individual glasses, layer chocolate cake cubes, cherry mixture, and mascarpone cream.
  3. Repeat the layers until all ingredients are used, finishing with mascarpone cream on top.
  4. Garnish with chocolate shavings and extra cherries.
Chill and Serve
  1. Cover the trifle and refrigerate for at least 2 hours before serving to allow flavors to meld.
  2. Serve chilled and enjoy your festive dessert!

Notes
