Ingredients
  

For the Salmon
  • 4 fillets salmon about 6 oz each
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 2 cloves garlic minced
  • 1 teaspoon olive oil for cooking
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Vegetables
  • 2 cups broccoli florets
  • 1 cup carrots sliced
  • 1 cup bell peppers sliced
  • 1 tablespoon olive oil
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare the Marinade
  1. In a small bowl, whisk together balsamic vinegar, honey, soy sauce, minced garlic, salt, and pepper.
  2. Place the salmon fillets in a shallow dish and pour the marinade over them. Let marinate for at least 15 minutes.
Prepare the Vegetables
  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss broccoli, carrots, and bell peppers with olive oil, Italian seasoning, salt, and pepper.
  3. Spread the vegetables in a single layer on a baking sheet.
Roast the Vegetables
  1. Place the baking sheet in the preheated oven and roast for 20 minutes, or until the vegetables are tender and slightly caramelized.
Cook the Salmon
  1. While the vegetables are roasting, heat 1 teaspoon of olive oil in a non-stick skillet over medium-high heat.
  2. Remove the salmon from the marinade and cook in the skillet for 4-5 minutes on each side, or until cooked through and flaky.
Glaze the Salmon
  1. During the last minute of cooking, brush the remaining marinade over the salmon to create a glaze.
Serve
  1. Serve the glazed salmon alongside the roasted vegetables.
