Instructions

  1. If using fresh fava beans, remove them from their pods and steam for about 3 minutes until tender. Rinse canned fava beans under cold water.
  2. If using fresh beans, pinch each bean to remove the outer skin once cooled.
  3. In a bowl, whisk together lemon juice and olive oil; season with salt and pepper to taste.
  4. In a large bowl, combine peeled fava beans, diced Pecorino cheese, and chopped parsley. Drizzle the dressing over the mixture.
  5. Toss gently to combine and serve immediately or chill in the fridge for 30 minutes for enhanced flavor.
