  • 1 packet taco seasoning (about 1 oz)
  • 9 no-boil lasagna noodles
  • 8 oz cream cheese, softened
  • 2 cups shredded cheddar cheese
  • 1 cup salsa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup diced tomatoes (fire-roasted preferred)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/4 cup chopped green onions

Instructions

  1. Preheat oven to 375°F (190°C) and grease a large baking dish with nonstick spray.
  2. In a skillet over medium heat, brown the ground beef until fully cooked; drain excess fat.
  3. Stir in taco seasoning and diced tomatoes; simmer for about 5 minutes.
  4. Begin layering in the baking dish: spread a thin layer of salsa on the bottom, followed by noodles, half of the beef mixture, dollops of cream cheese, and a sprinkle of shredded cheese. Repeat layers until all ingredients are used.
  5. Cover with foil and bake for 30 minutes; remove foil and bake an additional 10-15 minutes until bubbly and golden.
  6. Let cool for a few minutes before garnishing with green onions and serving.
