  • 1 lb salmon fillet
  • 1 cup quinoa
  • 2 cups fresh spinach
  • 1 medium cucumber, sliced
  • 1 ripe avocado, sliced
  • 1/2 cup Green Goddess dressing (homemade or store-bought)
  • Juice of 1 lemon
  • 1 can (15 oz) chickpeas, drained and rinsed
  • Salt & pepper to taste

Instructions

  1. Rinse quinoa under cold water until clear. Cook according to package instructions using 2 cups of water or broth until fluffy (about 15 minutes).
  2. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  3. Place salmon on the baking sheet, season with salt and pepper, and squeeze fresh lemon juice over it. Roast for 12-15 minutes until flaky.
  4. In a bowl, combine spinach and cucumber with a drizzle of olive oil and salt.
  5. Layer quinoa in bowls, top with salmon, cucumber-spinach mix, avocado slices, chickpeas, and drizzle with Green Goddess dressing.
