  • 2 cups shredded cheddar cheese (divided)
  • 1 can (10 oz) diced tomatoes with green chilis
  • 1 tsp onion powder
  • ½ tsp cayenne pepper (adjust to taste)

Instructions

  1. Preheat oven to 350°F (175°C). Spray a 9×13-inch baking dish with nonstick cooking spray.
  2. Cook chicken in a skillet over medium heat until no longer pink inside, about 6-8 minutes per side. Let cool slightly and shred.
