  • 1 cup unsalted butter, room temperature

  • 3 tbsp fresh sage, chopped
  • Salt and pepper to taste
  • 1 gallon cold water (for brine)
  • ½ cup sugar (for brine)

Instructions

  1. Prepare the Brine: In a large container, dissolve half a cup of sugar and salt in one gallon of cold water. Submerge the turkey in the brine and refrigerate overnight.
  2. Mix Herb Butter: Combine room-temperature butter with minced garlic and chopped herbs until well mixed.
  3. Preheat Oven: Heat your oven to 325°F (165°C).
  4. Apply Herb Butter: Remove the turkey from the brine, pat dry, then lift the skin to apply half of the herb butter directly onto the meat. Spread remaining butter on the exterior.
  5. Season: Generously season with salt and pepper.
  6. Roast: Place turkey breast-side up in a roasting pan, cover loosely with foil, and roast for about 13-15 minutes per pound. Remove foil during the last hour for a golden finish.
